It’s soft and deeply textural, delivering masses of ripe red and black fruits that coat the entire palate, cleansed by brisk acids that leave nuances of sweet spice, licorice and bitter herbs toward the close. For all of its opulence and structure, this is remarkably fresh through the finale, not quite revealing all of its charms today. Fruit is crushed, cold-pressed and left to ferment for 25-30 days at a controlled temperature. When fermentation is complete, the wine is held in steel tanks. The rested wine is then poured over the unpressed skins of the estate’s Amarone in late January or mid-February, followed by a second maceration and fermentation with the marc of the Amarone to acquire complexity, structure and elegance. After the pressing, the wine is decanted into cask where malolactic fermentation takes place. After 24 months, the wine is then bottled for a minimum of six months’ further refinement.\u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eThe Estate\u003cbr data-mce-fragment=\"1\"\u003eOfficial documents from as early as the mid-1500s attest to the Bertani family heritage in the Valpolicella region. Combining their deep respect for tradition and love of the land with commercial savvy and innovative drive in both the areas of production and cultivation, the brothers Bertani built an enterprise unique to the Veneto of their epoch. With a forward-looking spirit, they introduced revolutionary vine growing techniques developed by agronomist Jules Guyot, techniques to which Gaetano Bertani had been exposed during his years of political exile in France for his active role in the Italian Unification Movement against the Austrian Empire. The brothers Bertani became the first in the region to bottle and sell Veronese wines, such as Valpolicella Ripasso, Recioto and Soave on a larger scale.
