In Caterìa they started some works that has continued in the years. Fay uses 100% Nebbiolo variety, cultivated with Guyot method. The production zone is Valgella in the west side of Teglio district, where the vineyards are south-oriented in order to receive the sun rays during the whole day. This vineyard produces 40 hl\/hectare and the harvest is planned in the second half of October. This phase is then followed by fermentation in steel for two weeks and maceration process for 6 days.
