The style is the result of hand harvest, strict attention to temperature control, and use of indiginous yeast and sequential natural malolactic fermentation. The result is an ethereal wine with sumptuous flavors of clove, white pepper and honey balanced with a nose of anise and white flowers. It is silky and round but with balanced acidity with hints of graphite.
