The south westerly ASPECT\u003cbr\u003eensures the vineyards are exposed to the prevailing summer breezes off the sea\u003cbr\u003ewhich cool the vineyards down in the afternoons and evenings. This in turn gives\u003cbr\u003ethe grapes more time to ripen. This block is planted on a band of Malmesbury\u003cbr\u003eshale that runs through the farms top 3 vineyards. This shale is the oldest soil type\u003cbr\u003ein South Africa and one of the oldest in the world. Due to leaching of the soils over\u003cbr\u003emillennia they are not very fertile and therefor limit the vigour of the vines and\u003cbr\u003eincrease resulting quality of the grapes. The vineyards yield between 5 and 6 tons\u003cbr\u003eper hectare and were planted in 1998.\u003cbr\u003eCellar:\u003cbr\u003eThe grapes are hand harvested and sorted twice in the cellar, as bunches and as\u003cbr\u003eberries.\u003cbr\u003eFermentation then occurs spontaneously in 7000 liter French oak tanks, followed\u003cbr\u003eby a post fermentation maceration on the skins of 30 days.\u003cbr\u003eMaturation then takes place in 225 liter French oak barriques for 24 months. 30%\u003cbr\u003enew oak is used with the remainder made up of second and third fill barriques\u003cbr\u003eTasting notes and analysis:\u003cbr\u003eColour: Deep Ruby\u003cbr\u003eNose: Black currents, sour cherries, black olive, violets, fresh fenel and cigar box.\u003cbr\u003ePalate: Ripe red and black fruit on entry.
