Artisanal landscape blend of vines from garrigue highlands of Vinalopó and\u003cbr\u003ebalsamic woodlands of Marina Alta, sub-zones of Alicante.\u003cbr\u003eThe vines are cultivated in a sustainable manner, growing in a way that respects the\u003cbr\u003eenvironment. The “El Veneno” and “Los Burros” parcels are located in the Alto Vinalopó region\u003cbr\u003eof Alicante in Spain. The Monastrell is trained on traditional goblet on drylands. Syrah and\u003cbr\u003eAlicante Bouchet are trained on trellises with small water inputs to beat the summer heat.\u003cbr\u003eEach variety is harvested separately at its perfect point of maturity and ferments in small\u003cbr\u003estainless steel tanks. The vinification is carried out in tanks of 10000 L with whole grain and\u003cbr\u003e20% of branch. The fermentation is under controlled low temperature, at 21ºC, and it is carried\u003cbr\u003eout with its own native yeast. 20% of the wine is aged in French oak barrels of 500 L.\u003cbr\u003eT A S T I N G N O T E S\u003cbr\u003eIt has notes of scrublands, small pine tree, resins, balsamic, rosemary, thyme and jar.
