Neutral yeast in order to preserve the fruity aromas of the grapes, keeping the fresh typicity of that terroir. Fermentation at 16°C to get the range of flavours and aromas characteristic of this type of terroir while preserving freshness and fruit. Aged 5 months on lees and stirred once to better express the typicity of the terroir.
