There is ample tannin which has yet to be fully integrated. It will require significant cellaring of at least a decade. Domenic Torzi is the man behind these wines. He believes in non-interventionist winemaking including, among other things, wild yeast fermentations, no acid additions, and bottling without fining and filtration.
