This fermentation was then added to the Cabernet Franc which was 15% whole cluster and the rest destemmed. This was a very ripe vintage, with low nutrients in the grapes, and the fermentation took much longer than normal, leading to a wine with big fruit, soaring aromatics and a snappy character from the higher than normal VA. After pressing the wines underwent malo and was aged three 500L puncheons and two 228L older, French oak barrels.The wine had two additions of SO2 with 30ppm added in February 2024 and 25ppm added at bottling.
