The juice was\u003cbr data-mce-fragment=\"1\"\u003e cold settled for seventy two hours, before being fermented at cool temperatures to retain\u003cbr data-mce-fragment=\"1\"\u003e the wines naturally bright fruit characters. We deliberately choose to stop the\u003cbr data-mce-fragment=\"1\"\u003e fermentation to retain a small amount of natural sweetness, post fermentation we also\u003cbr data-mce-fragment=\"1\"\u003e allowed the wine to rest on the yeast lees for several months.\u003cbr data-mce-fragment=\"1\"\u003e Viticulture Notes\u003cbr data-mce-fragment=\"1\"\u003e This is a single vineyard wine for our Waihopai Valley property. On this vineyard the clay\u003cbr data-mce-fragment=\"1\"\u003e influenced soils and the high diurnal temperature variation produces highly aromatic\u003cbr data-mce-fragment=\"1\"\u003e wines with a lovely acid spine, we bunched thinned then vines to ensure a moderate crop\u003cbr data-mce-fragment=\"1\"\u003e and lightly leaf plucked.
