It was fermented in stainless, with 50% MLF, before heading to bottle for 3 years. It was disgorged in May 2023 with 0 dosage. Tight and tart, with rhubarb, crunchy red apple across a cherry meringue core, kissed with oxidative notes, and tightened with pink grapefruit on the snappy finish.
