Currently, Jaume and Xavier Gramona Batlle, 5th generation, are carrying the family legacy and running the winery, making cava according to the traditional method as well as the most creative still wines.\u003cbr\u003e \u003cbr\u003e Gramona Mart Xarel·lo Vermell is made from one of Penedès’ ancient native varieties that was on the edge of being lost; Xarel·lo Vermell. They grow this grape on a small, Demeter certified two hectare estate with clay-calcareous soil. They cultivate the vines according to ecological and biodynamic principles, focussing on careful observation, the use of natural resources and high levels of biodiversity. They do not use any synthetic chemicals. The harvest is carried out manually on flower day of the biodynamic calendar.\u003cbr\u003e \u003cbr\u003e When the Gramona Mart Xarel·lo Vermell grape reaches the winery, it is macerated cold for 48 hours. Fermentation then takes place in stainless steel tanks at a controlled temperature.
