The\u003cbr\u003evineyards are trellised and undergo summer canopy management practices such as\u003cbr\u003esuckering and tipping to ensure sufficient sunlight penetrates the canopy.\u003cbr\u003eHARVEST DATES\u003cbr\u003eLate January to early February 2015\u003cbr\u003eWINEMAKING\u003cbr\u003eThe grapes were picked by hand very early in the morning, which allowed for the\u003cbr\u003egrapes to be delivered cold to the cellar, where they were destalked and gently\u003cbr\u003epressed. The free-run juice settled for two days before the clear juice was racked off\u003cbr\u003eand cold fermented in tank. On completion of fermentation, the wine was left on\u003cbr\u003efine lees before blending and bottling.\u003cbr\u003eWINEMAKERS COMMENTS\u003cbr\u003eCape Granite White uses the perfectly suited Chenin Blanc, Viognier and Grenache\u003cbr\u003eBlanc on the Estate to produce a wine in balance with its surroundings.
