This\u003cbr\u003e wine comes from ancient, gnarled vines, some\u003cbr\u003e approaching and many over a hundred years of\u003cbr\u003e age that not only survive but thrive on their own\u003cbr\u003e roots in some of the oldest soils on the planet.\u003cbr\u003e In the first week of April whole bunches of Shiraz\u003cbr\u003e were hand harvested, then gently crushed and\u003cbr\u003e naturally fermented in open fermenters for eight\u003cbr\u003e days, hand plunged twice a day, before careful\u003cbr\u003e basket pressing into some new but predominantly\u003cbr\u003e older French Oak Barriques to finish fermentation.\u003cbr\u003e After 18 months maturation and a racking in the\u003cbr\u003e same oak, we bottled our Lionheart with minimal\u003cbr\u003e winemaking artifact, to capture the essence\u003cbr\u003e and purity of Carl’s vines. Dandelion Vineyards\u003cbr\u003e Lionheart is ready to drink and will reward\u003cbr\u003e cellaring and decanting.\u003cbr\u003e \u003cbr\u003e Tasting Notes\u003cbr\u003e Colour\u003cbr\u003e Deep and velvety and dark purple\u003cbr\u003e with an unfiltered plushness.\u003cbr\u003e Nose\u003cbr\u003e Dark liqueur chocolate freshly grated and\u003cbr\u003e earth freshly dug with a well-cared-for\u003cbr\u003e shovel. Rosemary flowers as you brush\u003cbr\u003e by them; violets at first light; plums about\u003cbr\u003e to fall from the tree; white pepper in the\u003cbr\u003e mortar. Gentle oak undertones then play\u003cbr\u003e bouquet’s role all so sotto voce: mocha,\u003cbr\u003e and old old furniture not over polished.\u003cbr\u003e Aromatics return with bay leaf and then\u003cbr\u003e minerals and graphite.
