The vineyards are made up of old plants, partly pergola, partly espalier, on slopes facing west at 400 - 500 metres above sea level, and the roots that sink into clayey soils and morainic deposits of porphyritic gravel. The vinification is carried out in the traditional way on the skins in steel at 25°, with delicate mixing of the cap for the extraction of the colour (by cap we mean that solid layer of skins, pips and other dry parts that stops at the top, at cap precisely, of the tank, driven by the carbon dioxide produced during fermentation).
