Farmed specifically for rosé in the classic French style, we hand-harvest whole clusters from fully mature Mourvèdre vines at optimal ripeness. The juice is then cold-settled for 48 hours before being racked and inoculated for a slow, cool fermentation at approximately 55°F, enhancing its crisp, aromatic profile.
