The unforgiving mountaintop is dry with fine volcanic gravel and\u003cbr\u003e\nrocky patches offering no traction for anything but the hardiest grapevines. The\u003cbr\u003e\nclusters that survive here are few, small, and sparsely fruited – giving every tiny, thick-\u003cbr\u003e\nskinned berry the space to reach its full potential. This desolate place is planted\u003cbr\u003e\nprimarily to Cabernet Sauvignon, with smaller blocks of Merlot and the highest\u003cbr\u003e\nelevation Sauvignon Blanc in the U.S.\u003cbr\u003e\nW I N E M A K I N G\u003cbr\u003e\nThese grapes were hand-picked from an elevation ranging from 2,400 feet to 2,800 ft.\u003cbr\u003e\nin the crisp cool morning. The day starts early up on Pine Mountain as we are far\u003cbr\u003e\nabove the fog layer down below in the valley. This ensures the bunches are cool and\u003cbr\u003e\nfirm for the long ride down the mountain. The grapes are cold soaked for 3-4 days\u003cbr\u003e\nbefore fermentation. Fermentation takes placed for 2 weeks with extended\u003cbr\u003e\nmaceration with the skins to increase complexity. Once fermentation is complete, the\u003cbr\u003e\ngrapes are gently pressed with the resulting wine being aged in 35% new French Oak\u003cbr\u003e\nbarrels for 21 months.\u003cbr\u003e\nT A S T I N G N O T ES\u003cbr\u003e\nDark blue fruits, heavy savory spice and mountain scrub provide a seductive nose.\u003cbr\u003e\nOnly 7% Cabernet Sauvignon made it into this year's blend, selected from a lighter\u003cbr\u003e\nblock which brings bright red fruits and just enough tannins to bolster the gorgeous\u003cbr\u003e\nmountain Merlot. Blueberry, cherry, some dried herbs like sage and a forest floor like\u003cbr\u003e\ncharacter, allspice and a hint of cinnamon.
