These vineyards\u003cbr\u003e\nare picked at different ripeness levels to achieve a wine that is supple and\u003cbr\u003e\nround, yet focused, with balanced acidity. Fermentation took place in stainless\u003cbr\u003e\nsteel tanks under controlled temperature conditions prior to blending. The\u003cbr\u003e\n2021 vintage was plentiful and provided healthy fruit with a classic Sauvignon\u003cbr\u003e\nBlanc profile. No acidification during any stage of vinification.\u003cbr\u003e\nTASTING NOTE\u003cbr\u003e\nThis Sauvignon Blanc is pale lemon-green with vibrant aromas of apple blos-\u003cbr\u003e\nsom, green melon, stone fruit and delicate hints of lemon verbena, elderflow-\u003cbr\u003e\ner and grapefruit. The palate is lively and textured - and shows more tropical\u003cbr\u003e\nfruits flavours of pineapple, pear, papaya, greengage, even gooseberry. The\u003cbr\u003e\nmid-palate is round and smooth with a refreshingly tangy yet integrated acidi-\u003cbr\u003e\nty.
