Planted in 2000 to a mix of Dijon clones 115, 667, and 777 on low-vigor 101-14 rootstock, the vineyard benefits from cooling fog that rolls through the Petaluma Gap each morning and evening, creating a long, temperate growing season with small, concentrated, flavor-packed berries.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eWinemaking\u003c\/strong\u003e\u003c\/p\u003e\u003cp\u003eFruit was harvested early in the morning to arrive at the winery cool and vineyard-fresh. After destemming (but not crushing), the berries underwent a cold soak of up to two weeks to soften skins and allow for ideal extraction. Fermentation took place in a combination of closed and open-top stainless steel fermenters using both punch-downs and pump-overs to extract color and tannins.
