Stephen George has taken great interest in applying his winemaking approach to\u003cbr\u003e\nparcels from elsewhere within the Piccadilly Valley and seeing how the wines compare with\u003cbr\u003e\nthose from the Ashton Hills Vineyard. The resulting blend benefits from varied fruit character\u003cbr\u003e\nand vineyard expression, while maintaining the fine tannin structure that is typical of the Ashton\u003cbr\u003e\nHills style.\u003cbr\u003e\nGrapes were handpicked, keeping individual clones separate in small open fermenters. Some\u003cbr\u003e\nwhole bunch fruit was added to ferments, enhancing aromatics and structural complexity.\u003cbr\u003e\nFermentation was initiated by indigenous yeast (wild ferment). Each clonal parcel was basket\u003cbr\u003e\npressed and filled to seasoned French oak barrels with full solids. All barrels were kept on lees\u003cbr\u003e\nto build palate, body and complexity. They were racked and blended just prior to bottling.\u003cbr\u003e\nT A S T I N G N O T E S\u003cbr\u003e\nBright and juicy red fruit characters with a savoury back half of earth, leather and subtle dried\u003cbr\u003e\nherbs.
